The goal is to create confusion and cause the driver to fumble in a way that can be used against them ("the driver sounded nervous.").

What to do –

Only open the driver's window – about 2 inches – so that you can pass paperwork into and out of the vehicle. Keep all other windows closed. This does not violate any law – anywhere. This also helps prevent cops from doing a "plain sight search" of the interior of your car and then claim to see something that requires further investigation. It helps prevent them from claiming they smell something suspicious.

DON'T ANSWER QUESTIONS. Provide your license, registration and insurance as required. Otherwise STFU. Everything you say will be used against you. Cops can claim they smell alcohol on your breath or claim you slurred your speech. The more you talk the more reasons the cops will find to investigate further.

Cops are there to take your freedom. They know how to escalate to accomplish this goal. Avoid any interaction with cops. If you must interact with them, know your rights and exercise them fully.
